Home made mayonnaise

Of course you can buy a jar of mayonnaise in the closest supermarket, but to make your own is both easy and it tastes so much better! You can also experiment to get the exact flavor you like, with more or less Dijon or maybe add some fresh squeezed lemon juice.

Here is my favorite mayonnaise recipe. I got it from my mom a few years ago and it never fails me. If you have a food processor at home that is the easiest, but you can also make it with a bowl and a whisk.

Ingredients:
2 eggs
2 T red wine vinegar
1.5 T Dijon mustard
1  2/3 Cups sunflower or canola oil
1 tsp salt
freshly ground black pepper

1. Add eggs, mustard, vinegar, salt and pepper in the food processor. (Ideally, all ingredients have to be about room temperature or cold)
2. Turn the machine on and once the ingredients are mixed together, very slowly start to drizzle in the oil, drop by drop.
3. After a while when you see the egg and the oil thickens to a mayonnaise, you can pour in the oil a little faster in a thin stream. The mayonnaise should be thick and fluffy when it is completed.
4. If the mayonnaise is too thick add a few drops of water or if it is not thick enough, with the machine running, add a little more oil.

TIP!
Make aioli by adding a few cloves of pressed garlic and some freshly squeezed lemon juice. Season with a little cayenne pepper.
Or, add a few spoons of Greek yogurt and your favorite herbs to make a fresh dipping sauce.
